Easy Soup

What's for dinner tonight you ask? I have left over grilled chicken, some sweet potatoes, carrots, half an onion and wilted celery...I am cooking this yummy soup. I make it a lot and substitute left over chicken for the turkey and any greens for the escarole. Tonight's greens are rainbow chard. I am serving it with a salad and cornbread (if I get it together...) Cheers!

I made this a lot when my girls were babies. It is a perfect first finger food as the tomatoes and sweet potatoes get cooked soft. And when they were first eating, since I had to peel one sweet potato for the soup, I just peeled and chopped another one to make a quick puree.
